A tree linked with the history of man, a branch that is a symbol of peace and a fruit that provides yellow “gold”.
Extra-virgin olive oil, one of the main
ingredients
of the
Mediterranean diet, is immediately associated with
Italy.
It is a unique product by virtue of its
ancient bond
with
the land. This bond relects the biodiversity of
our territory.
The olive groves at our farm are
situated in
one of
the northernmost traditional olive-growing areas
in the world: the Pedemontana del Grappa.
Although it’s
difficult to determine the exact age of the olive trees, many of them are considered to be several hundred years old. Other younger olive trees are 20 to 50 years old.
Every region of Italy has different
types of soil, consequently, the oil produced
has its own
typicalities and should be tasted
acknowledging
the
value of these differences.
In order to maintain the high quality
of the end product, about 4 hours after being
picked, strictly by hand, we take our olives to
our oil mill for pressing.
All the Olio di Rosso varieties are
obtained from our olives grown at an altitude of 300 metres
above sea level, on steep and rocky terrain.
